5 Weeknight Quick Dinners

Simple. That’s pretty much what we need when we finally pull into the driveway after a long day at the office: an easy-to-make, healthy, hot meal we can put on the table in a half an hour or less, so you can get on with your evening! Complicated can wait for the weekend!

Try our five top weeknight quick dinners this Monday to Friday—add these to your list of dependable standbys:

Monday – The five-minute microwave trick

Mondays are especially harrying, don’t you find? More reason to ease into the first dinner of the week: hands-down, our Microwave Ready Creamers are the fastest of all. Ready in five minutes, our pre-washed Creamers cook in their own trays. Microwave, add a dash of olive oil or butter and toss in your choice of seasonings: Savory Herb or Garlic Parsley. Add a grilled or sautéed protein—seafood, beef, veggie burger—and (pre-washed) salad greens with your favorite bottled dressings. Dinner is served.

Tuesday – Healthy, simple, tasty

Pair a poached fish fillet or roasted pork tenderloin with Easy Creamer Potatoes with Roasted Vegetables for a complete meal. This recipe calls for asparagus, cherry tomatoes and Portobello mushrooms, but you can substitute with any fresh, seasonal veggies. Bocconcini (semi-soft fresh Mozzarella balls) are optional, but will add a clean and light, summery contrast to the caramelized veggies.

Wednesday – Casserole for Hump Day

Celebrate reaching the halfway-of-the-week point with a hearty casserole. Chicken Cordon Bleu Scalloped Potatoes are creamy, cheesy and savory, with chicken, ham, milk and Mozzarella. Prep the night before and refrigerate, then just reheat after work if you want to minimize the pre-dinner wait time. Garnish with fresh or dried parsley. Pair with roasted baby carrots—pre-peeled and washed, tossed in olive oil and S&P—that you can bake in the oven at the same time as the casserole.

Thursday – BBQ bliss

Potatoes, sausages and peppers recipe

Grill up a tender steak, salmon or tofu on the BBQ and add this straightforward (delicious) Mediterranean Potato Salad. Inspired by the classic Greek salad, this one combines sweet, thinly sliced red onion with Kalamata olives, peppers, cucs, Feta and Creamers, plus a tangy lemon juice-honey-basil-oregano dressing. Serve it warm, then store the rest in the fridge and serve cold with Saturday’s dinner—grilled prawns, perhaps?

Friday – One-skillet TGIF dinner

Relax on the last day of the workweek. In one pan, sauté Potatoes, Sausages and Peppers. Onions add depth to silky Dynamic Duo Creamers, sweet red peppers and your favorite smoky links, enhanced with aromatic rosemary. Serve with some rustic bread and, if you like, a dry German Riesling. Everyone will love this dish, and you’ll love the minimal cleanup. If you feel like splurging, pick up an apple pie at the bakery for dessert.
