Preparation
Preheat the oven to 400 °F.
Using a mandoline or slicer, thinly slice the potatoes into 1/8″ slices.
Add the potato slices to a bowl and toss with the olive oil and 1/8 teaspoon sea salt.
Line two baking pans with parchment paper and evenly distribute the potato slices on the pan.
Place the pans on the middle racks of the oven and bake for 10 minutes, then flip and bake another 4 to 6 minutes, keeping a close eye on the potato slices so they do not burn.
The potato slices should be crispy and slightly browned (as pictured) that’s how you know they are done!
Transfer the potato chips from the pans to a paper towel to absorb any extra oil and let them cool completely.
Heat a small pan over low heat or double boiler and melt the chocolate until smooth, transfer to a small bowl.
Dip 1/2 of the potato chips into the chocolate and place on a large plate or baking sheet.
Repeat until all potato pieces are half-coated in the chocolate.
Finally, sprinkle the chocolate covered potatoes with the remaining 1/4 teaspoon sea salt.
