Preparation
Preheat your smoker (if you have one) to 225 °F. If you’re using a grill, preheat the grill leaving one side off, you’ll be cooking using the indirect method. See our guide for making a homemade smoke pouch to learn more. Prepare your smoker box or smoker foil pack and place it directly on the gas burner or charcoal.
Remove the plastic packaging and spice packet from the potato tray.
Add the olive oil, water, and minced garlic to the potatoes, plus half of the spice package that comes with the potatoes. Stir the potatoes so that they are all coated with the olive oil mixture.
Cover three quarters of the potato container with a piece of aluminum foil, leaving about one quarter open.
Place the potato container in the smoker or on the side of the grill away from the heat (keep the lid of your grill closed while cooking).
Smoke the potatoes for one hour, shake the potato container and return to the smoker for another hour or until the potatoes reach the desired doneness.
Stir the potatoes, so that they’re coated with the garlic and spice blend. Sprinkle the grated parmesan cheese and parsley over the potatoes. Serve immediately.
