This German potato salad is made with red potatoes, bacon, and a homemade dressing made of sautéed onion, apple cider vinegar, and bacon drippings. Serve it warm or chilled and enjoy!

Preparation
Quarter potatoes and cook in a large pot of boiling, salted water for 6 to 8 minutes, until tender. Drain and set aside.
Meanwhile, in a medium skillet, cook chopped bacon on medium heat until crispy, about 4 to 5 minutes. Remove bacon with a slotted spoon and drain on paper towel, leaving bacon fat in the pan.
Place pan back on the heat and cook onion in bacon fat until tender, about 4 to 5 minutes.
To the onions, add vinegar, sugar, salt, and pepper. Bring to a simmer over medium heat and cook for 2 to 3 minutes.
Remove dressing from heat and pour over potatoes. Add cooked bacon and parsley to potatoes and toss.
Serve immediately and allow to cool.
