These Little Potato Halloween Monster Eyeballs will be a hit with your little ghouls for a snack after school or for a Halloween party!

Preparation
Place potatoes in a pot of salted boiling water, and simmer for 15 minutes. Preheat oven to 450°F. Drain potatoes and place on a baking tray sprayed with cooking spray. Let the potatoes cool enough to handle and then squish them down with the heel of your hand, using a clean dish towel. Drizzle with olive oil and season with salt and pepper. Bake for 15 minutes or until crispy.
Meanwhile take a pepperoni stick and roll a cheddar cheese slice around the pepperoni. Slice in 1/2′′ slices.
Top each potato with sour cream, a pepperoni slice, and a cheese slice. Serve warm.
