Preparation
Preheat oven to 375°F.
Either pound the turkey breast flat, or carefully butterfly it by slicing it in half by thickness so it lies open as one piece. It should be about one inch thick. Season both sides with salt and pepper.
In a medium-size bowl, mix together the potatoes, cream, pecans, apple, cheese, and rosemary. Spread it on the turkey and season again with salt and pepper. Gently roll the turkey along the long edge, trying not to squeeze out the filling (some will ooze out, that’s okay. Simple stuff it back in where you can).
Tie the rolled turkey breast together with kitchen string in 3 or 4 places, and carefully place on a roasting pan. Drizzle with the oil and then sprinkle with savory.
Bake uncovered for about one hour or until cooked through. Allow to rest for 2 to 3 minutes before slicing.
